I decided to fit in a quick brew session this past weekend. I ordered a ton of hops recently so it’ll be a hoppy brewing year I’m guessing. This one was an IPA. The usual suspects were present: Simcoe, Citra, Zeus, Centennial. Although Centennial underwhelmed me when opening them up. I’m thinking of doing a Black IPA again and I’ll probably do the same hop additions but leave the Centennial out. I’m also planning a Belgian IPA to use up some yeast I have.
Anyway, this IPA came in a little under gravity and over volume (I tried to compensate for wort and beer loss due to all the hops and dry hops) but it’ll end up in the 5+ abv range. It also maxed out my kettle, as you can see in the picture below, but somehow I avoided a boil over. I pitched a huge slurry of 1056 and it was going to town in around 3 hours. It fermented cool in my dining room but got up to around 66F at its peak. Now it’s at around 60F. It’ll be dry hopped and fined and ready to go after the Holidays have depleted my beer supply like usual.
